Today at the neighbors': Calçots! Catalonian cuisine. You can read a vivid description here Calcots (pronounced kalsot) are roasted over charcoals on big wire racks. Even though the cooking is gentle, the outside of the calçots becomes charred. Small bundles are then wrapped in paper and arranged lengthwise on the inside of a long clay roof tile. At the table, you're provided a bowl of romesco sauce - special red pepper, almond, garlic and olive oil sauce. Strip the charred outside sheath off, dip or drag the white part of the calçot through the thick sauce and lower it into your mouth, biting off the juicy, tender bottom half. This is what your hands look like afterwards... Bon appetit! Guten Appetit! |

ReplyDeleteKatherine, the calcots selves have a very mild onion taste. The best part is the almond- olive oil- Ñora (a sort of red peppers) sauce...

Kenju - I looked it up, since calcots are a crossing between leeks and spring onions and ramps are a leek kind, they are related. But I cannot tell you the difference in taste! plus I read ramps are boiled in water, calcots are roasted, never boiled...
